Slow cooker chicken and quinoa stew with sweet potatoes and mushrooms – a simple and nutritious weeknight meal.
Ingredients:
  • 1 teaspoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 skinless, boneless chicken breasts
  • 1 (32 fluid ounce) container vegetable broth
  • 2 sweet potatoes, diced
  • 1 cup uncooked quinoa
  • 5 mushrooms, chopped
  • 2 teaspoons dried oregano
  • 2 teaspoons curry powder
  • 5 green onions, chopped
  • 1 bay leaf
Instructions:
  • In a skillet over medium heat, heat oil and sauté onion and garlic until softened and translucent, about 5 minutes.
  • Layer chicken breasts at the bottom of a slow cooker. Add onion, garlic, vegetable broth, diced tomatoes, sweet potatoes, quinoa, green onions, mushrooms, curry powder, oregano, pepper, and bay leaf. Stir to combine. Cook on Low for 7 to 8 hours or until chicken is tender.
  • Remove and discard the bay leaf, then shred the chicken using 2 forks. Mix the shredded chicken back into the stew thoroughly before serving.
