Slow cooker apricot chicken recipe

Budget-friendly chicken thigh casserole cooked in a slow cooker with quick 15-minute meal prep.
Ingredients:
  • 8 Free Range Chicken Thigh, excess fat trimmed
  • 40g pkt French Onion Soup Mix
  • 410g can apricot halves, drained
  • 405ml can apricot nectar
  • 10.00 gm Cornflour
  • Steamed rice, to serve
  • Steamed broccolini, to serve
  • Fresh thyme sprigs, to serve (optional)
Instructions:
  • Preheat a large non-stick frying pan over medium-high heat. Cook the chicken, skin-side down, until golden for about 3 minutes. Flip and cook for another 3 minutes. Transfer all the chicken to the slow cooker.
  • Spread the soup mix evenly over the chicken, arrange the apricot halves, then pour in the apricot nectar. Cover and simmer on Low for 6 hours.
  • Transfer the chicken to a warm oven tray using tongs and cover with foil to keep warm. Alternatively, place the tray in a preheated 180C/160 fan forced oven for 5-10 minutes without foil. Increase the slow cooker heat to High and stir the cornflour with 1 tablespoon of water until smooth. Add to the slow cooker, stir to combine, cover, and heat for 5 minutes. Stir again before serving.
  • Plate the succulent chicken and apricots alongside fluffy rice and vibrant broccolini, and garnish with fragrant thyme leaves for an extra touch of flavor, if desired.
