Savory butternut squash sausage stew with potatoes, carrots, and chickpeas slow-cooked for autumn warmth.
Ingredients:
  • 3 carrots, sliced
  • 0.75 butternut squash, diced
  • 1 pound sage pork sausage, crumbled
  • 3 potatoes, cut into small cubes
  • 3 stalks celery, sliced
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1 (15 ounce) can crushed tomatoes
  • 1 large onion, diced
  • 1 (8 ounce) can tomato sauce
  • 1 green bell pepper, thickly sliced
  • 4 cloves garlic, minced
  • 1.5 teaspoons curry powder
  • 1.5 teaspoons ground cumin
  • 1.5 teaspoons Chinese five-spice powder
Instructions:
  • Combine all ingredients in a slow cooker or tagine, mixing well.
  • Cook on High, covered, for 2 hours and 30 minutes until the butternut squash is tender and the sausage is fully cooked, stirring halfway through if possible.
