Delicious low-fat turkey stew cooked slowly with veggies and seasonings for a flavorful meal.
Ingredients:
  • 2 turkey thighs (about 1 1/2 pounds), skin removed
  • 1 small butternut squash (about 2 pounds), peeled, seeded and cut into 1 1/2-inch pieces (3 cups)
  • 1 medium onion, cut in half and sliced
  • 1 can (16 ounces) baked beans, undrained
  • 1 can (14.5 ounces) diced tomatoes with Italian seasonings, undrained
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Grease a 3- to 4-quart slow cooker with cooking spray, then combine all ingredients in the cooker, excluding the parsley.
  • Cook on Low heat setting for 7 to 8 hours, covered.
  • Place the turkey on a cutting board and carefully separate the meat from the bones, discarding the bones. Transfer the turkey back to the cooker and generously sprinkle with fresh parsley right before serving.
