Slow-cooked Italian beef with flavorful peppers and onions creates a gourmet experience from simple chuck roast.
Ingredients:
  • 1 (3 pound) beef chuck roast
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 3 tablespoons olive oil
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup crushed tomatoes
  • 10 pepperoncini peppers plus a splash of their juice
  • 4 cloves garlic, chopped
  • 1 tablespoon Italian seasoning, or more to taste
  • 3 green bell peppers, chopped
  • 1 onion, chopped
  • 12 hoagie rolls, split lengthwise
  • 12 slices provolone cheese, or as needed
Instructions:
  • Ensure the roast is generously seasoned with onion powder, garlic powder, salt, and pepper all over.
  • 1. Preheat a pan over medium-high heat until sizzling. Drizzle in olive oil. Sear beef until browned all around, rotating to capture all sides, for 5 to 10 minutes. Move roast to the slow cooker. Deglaze the pan by adding broth and loosening browned bits. Stir in Worcestershire sauce. Pour over the roast in the slow cooker.
  • Place the tomatoes, pepperoncini peppers with juice, garlic, and Italian seasoning in the slow cooker. Turn the roast to ensure it is well coated. Cover and cook on High for 4 hours.
  • Toss bell peppers and onion into the slow cooker, ensuring even distribution. Cook on High for an additional hour.
  • Season shredded beef with a perfect amount of salt and pepper. Allow the beef and sauce to mingle in the warm slow cooker until it's time to enjoy.
  • If desired, lightly toast hoagie rolls. Layer rolls with shredded beef and top each with provolone cheese.
