Effortlessly delicious slow cooker lemon-garlic chicken and rice for busy nights.
Ingredients:
  • 1 (32 fluid ounce) container chicken broth
  • 1 cup lemon juice
  • 2 tablespoons minced garlic
  • 1 tablespoon garlic powder
  • 1 tablespoon cayenne pepper
  • 8 (5 ounce) bone-in chicken thighs
  • salt and ground black pepper to taste
  • 2 tablespoons olive oil
  • 2.5 cups uncooked white rice
  • 2 cups sliced carrots
  • 1 pinch chopped fresh parsley, or to taste
Instructions:
  • Set the slow cooker to High. Pour chicken broth, lemon juice, garlic, garlic powder, and cayenne pepper into the bottom. Heat the mixture for about 5 minutes until warm throughout.
  • While you wait, warm oil in a skillet over medium-high heat. Season both sides of the chicken thighs with salt and pepper and place them in the sizzling skillet. Cook until crispy on both sides, about 5 to 7 minutes in total. Once done, set the chicken aside.
  • Place rice, carrots, and chicken into the slow cooker set on Low. Cover and let it cook for about 4 hours until the chicken is thoroughly cooked and reaches an internal temperature of 165 degrees F (74 degrees C).
