Ingredients:
  • 1 (1 pound) lean boneless pork loin roast, cut into chunks
  • 2 medium sweet potatoes, peeled and cubed
  • 1 medium red onion, chopped
  • 1 (14.5 ounce) can fire-roasted diced tomatoes
  • 1 cup diced green chiles
  • 0.5 cup chicken broth
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon ground black pepper
  • 1 tablespoon lime juice
Instructions:
  • Layer the pork, sweet potatoes, onion, tomatoes, chiles, chicken broth, cumin, salt, and pepper in the slow cooker.
  • Let the pork simmer gently for 6 to 7 hours until tender. Check the temperature with an instant-read thermometer - it should reach at least 145 degrees F (63 degrees C). Finish by stirring in fresh lime juice before serving.
