Delicious slow-cooked rosemary and garlic lamb with winter veggies.
Ingredients:
  • 2kg Whole Lamb Leg Roast
  • 2 tsp cracked black pepper
  • 3 rosemary sprigs
  • 8 garlic cloves, peeled
  • 250ml chicken stock
  • 600g baby potatoes, halved
  • 1 bunch Dutch carrots, trimmed
  • Steamed greens, to serve
Instructions:
  • In a large frying pan over high heat, heat the oil until shimmering. Add the lamb and cook for 4 minutes on each side, or until it is beautifully browned all over.
  • Place the lamb in a 5.5L slow cooker, season with cracked black pepper, rosemary, garlic, and stock. Cook on high for 4 hours, then reduce heat to low. Add potato and carrots, and cook for 2 more hours until lamb and vegetables are tender.
  • Plate the lamb alongside the vegetables and steamed greens.
