Slow cooker vegan curry with cauliflower, peas, potatoes, and tomatoes simmered in fragrant spices for a flavorful meal.
Ingredients:
  • 1 head cauliflower, chopped
  • 1.5 cups green peas
  • 3 potatoes, chopped
  • 3 tomatoes, chopped
  • 1 cup water
  • 1.5 teaspoons ground cumin
  • 1 teaspoon curry powder
  • 0.75 teaspoon ground turmeric
  • 0.5 teaspoon chili powder
Instructions:
  • Place cauliflower, peas, potatoes, tomatoes, water, cumin, curry powder, turmeric, and chili powder in a slow cooker and mix well.
  • Slow cook until vegetables are tender, for 5 to 6 hours.
