Tender roasted rabbit in spicy onion gravy, perfect for special occasions.
Ingredients:
  • 1 (3 pound) rabbit, cleaned and cut into pieces
  • 1 tablespoon ground black pepper
  • 1.75 teaspoons salt
  • 0.25 cup vegetable oil
  • 1 cup water
  • 0.75 cup ketchup
  • 1.5 tablespoons Worcestershire sauce
  • 4 teaspoons white sugar
  • 1 tablespoon paprika
  • 1 clove garlic, chopped
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • Season rabbit pieces generously with a savory blend of freshly ground pepper and salt.
  • In a large skillet over medium-high heat, heat vegetable oil until shimmering. Add rabbit and cook until beautifully browned all over. Transfer the rabbit to a 9x13-inch baking dish.
  • Mix together the onion, water, ketchup, Worcestershire sauce, sugar, paprika, and garlic in a medium bowl until well combined, then pour the mixture over the rabbit.
  • Roast in the oven without a cover, brushing with juices regularly, until exceptionally tender, approximately 90 minutes. Confirm doneness by inserting an instant-read thermometer into the meat closest to the bone, ensuring it reaches a minimum of 160 degrees F (72 degrees C).
