Indulgent beef stew with secret mac 'n' cheese bites. A mouth-watering surprise!
Ingredients:
  • 36.40 gm olive oil
  • 1kg diced casserole beef, excess fat trimmed
  • 2 large carrots, peeled, coarsely chopped
  • 2 garlic cloves, crushed
  • 40.00 ml plain flour
  • 2 x Mutti Polpa Finely Chopped Tomatoes 400g
  • 3 x 200g packets frozen mac and cheese balls
  • 2 bacon rashers, finely chopped
  • 85g (3/4 cup) pre-grated 4 cheese melt blend
  • Fresh continental parsley sprigs, to serve
Instructions:
  • Heat half of the oil in a large non-stick pan over medium-high heat. Cook the beef in 2-3 batches, turning occasionally, for 5 minutes until well browned. Transfer each batch to a heatproof bowl.
  • Heat the rest of the oil in the pan. Saute the carrots for 5 minutes until slightly softened. Stir in the garlic and cook for 30 seconds until fragrant. Lower the heat, add the flour, and stir for a minute. Gradually pour in 125ml (1/2 cup) water while stirring and scraping the pan. Incorporate the beef, tomatoes, and another 125ml (1/2 cup) water. Season generously.
  • Cover the pot and let it come to a gentle simmer. Tilt the lid slightly to allow some steam to escape, then reduce the heat to very low. Cook for 1 hour, stirring occasionally. Uncover and cook for an additional 15 minutes until the sauce thickens slightly.
  • Preheat your oven to 200°C/180°C fan forced. Line 2 large baking trays with baking paper and spread the mac and cheese balls evenly on them. Bake for 12-15 minutes until they turn golden brown.
  • Preheat a small non-stick frying pan over gentle heat. Add the bacon and stir occasionally for 3-4 minutes until it turns golden and crispy.
  • Preheat the grill on high heat. Arrange the beef mixture topped with mac and cheese balls on the grill, then sprinkle cheese around them. Grill for 2-3 minutes until golden. Serve topped with crispy bacon and parsley.
