Indulge in tender slow-cooked beef ribs paired with creamy cauliflower for a comforting winter meal.
Ingredients:
  • 18.20 gm olive oil
  • 1.4kg beef short ribs, excess fat trimmed
  • 150g speck, rind removed, cut into strips
  • 4 garlic cloves, thinly sliced
  • 40g (1/4 cup) plain flour
  • 375ml (1 1/2 cups) red wine
  • 500ml (2 cups) beef stock
  • 2 sprigs fresh rosemary
  • 2 dried bay leaves
  • 62.50 ml chopped fresh continental parsley
  • 1/2 (about 600g) cauliflower, cut into florets
  • 30g butter
  • 500ml (2 cups) milk
  • 2 tsp finely chopped fresh rosemary
  • 60g (3/4 cup) finely grated parmesan
  • White pepper, to season
Instructions:
  • In a large frying pan over medium-high heat, heat oil. Sear ribs in 2 batches, cooking for 2-3 minutes per side until golden. Transfer to the slow cooker.
  • Place speck in a frying pan and cook over medium heat, stirring occasionally, for 5 minutes or until golden brown. Add garlic and cook for 1 minute until fragrant. Stir in flour and tomato paste, cooking for an additional minute. Gradually pour in wine while stirring constantly until the mixture is smooth. Transfer everything to the slow cooker along with the stock, rosemary, and bay leaves. Cover and cook on low for 6 hours or until the meat is almost tender enough to fall off the bone.
  • Microwave cauliflower until just tender and transfer to a baking dish. In a saucepan, melt butter until foamy, then stir in flour and cook until bubbling. Remove from heat and slowly whisk in milk until smooth. Return to heat and simmer until thickened. Stir in rosemary, half the cheese, salt, and white pepper. Pour sauce over cauliflower, top with remaining cheese, and grill until golden brown. Let rest for 3 minutes before serving.
  • Remove excess oil from the beef, then garnish with fresh parsley before serving alongside cauliflower.
