Asian-style braised beef short ribs with Chinese broccoli

Try these tantalizing slow-cooked Asian beef short ribs.
Ingredients:
  • 36.80 gm sunflower oil
  • 1.2kg beef short ribs (see notes)
  • 1 onion, chopped
  • 1 carrot, sliced
  • 250ml soy sauce
  • 250g brown sugar
  • 4 star anise
  • 5 garlic cloves
  • 125ml rice wine vinegar
  • 500ml beef stock
  • 1/2 tsp sesame oil
  • 3 spring onions, sliced
  • Steamed rice, to serve
  • Chinese broccoli, to serve
  • Sliced red chilli, to serve
Instructions:
  • Heat your oven to 160°C.
  • In a flameproof casserole, heat oil over medium-high heat. Season the beef, then brown all over in batches for 3-4 minutes. Remove from the pan.
  • Sauté the onion and carrot until browned. Stir in soy sauce, sugar, star anise, garlic, vinegar, stock, sesame oil, and most of the spring onion. Simmer. Add beef, cover, and roast in the oven for 2 1/2-3 hours until tender.
  • Plate the beef alongside fluffy rice, vibrant Chinese broccoli, spicy chili, and the rest of the spring onion for a beautifully balanced meal.
