Savory bacon gives this slow-cooker Caprese dip a delicious twist!
Ingredients:
  • 5 slices bacon
  • 1/3 cup chopped sun-dried tomatoes
  • 2 packages (8 oz each) cream cheese, softened
  • 4 cups shredded mozzarella cheese (16 oz)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves
  • 1/4 cup diced tomatoes
  • Toasted baguette slices or crackers, as desired
Instructions:
  • Preheat your 6-quart slow cooker on the Low or Warm heat setting.
  • In a 10-inch skillet, crisp up the bacon over medium-high heat. Transfer the bacon to a paper towel to drain, making sure to leave 1 teaspoon of drippings in the skillet. Once cooled, crumble the bacon and return half of it to the skillet along with the sun-dried tomatoes. Cook for about 1 minute.
  • Lower the heat, then combine cream cheese, mozzarella cheese, and Parmesan cheese in the warm skillet, stirring until the cheeses are fully melted. Transfer the cheesy mixture into the preheated slow cooker, cover, and keep the dip warm for serving within 2 hours.
  • Before serving, adorn with delicate ribbons of fresh basil, ripe tomato, and the leftover crispy bacon. Enjoy with toasted baguette slices or crackers.
