Slow-Cooker Bacon-Ranch Chicken Melts

Try these delicious bacon-ranch chicken sandwiches for a simple and satisfying meal.
Ingredients:
  • 4 or 5 boneless skinless chicken breasts
  • 1/4 teaspoon pepper
  • 1/2 cup unsalted Progresso™ chicken broth (from 32-oz carton)
  • 2 tablespoons dry ranch dressing mix
  • 5 slices bacon
  • 8 burger buns
  • 4 tablespoons butter, softened
  • 1 cup shredded Cheddar cheese (4 oz)
  • Thinly sliced green onions and/or pickled jalapeño slices, if desired
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Season the chicken breasts evenly with salt and pepper and place them in a single layer in the slow cooker. In a measuring cup, whisk together the chicken broth and ranch seasoning. Pour the mixture over the chicken, cover, and cook on High heat setting for 4 hours.
  • Preheat the oven to 375°F. Arrange the bacon on a baking sheet lined with parchment paper. Bake for 20 to 30 minutes until it's nice and crisp. Transfer to paper towels to drain. Allow it to cool slightly before crumbling or slicing into bits.
  • Once the chicken is cooked, delicately transfer it to a cutting board and shred it using 2 forks before returning it to the savory broth in the slow cooker.
  • Preheat broiler. Spread butter on each half of the bun and place them buttered side up on a baking sheet. Broil 6 inches from the heat for 1-2 minutes until golden. Keep broiler on. Set the top buns aside. Place chicken on each bottom bun, add cheese, green onions, and/or jalapeños. Return to the broiler until cheese melts and bubbles. Top with the reserved buns and serve hot.
