Slow-Cooker Cheesy Mexican Chicken

Slow-cooked Mexican chicken with cheesy flavors, perfect over rice or salad.
Ingredients:
  • 1 lb boneless skinless chicken breasts, cut into bite-size pieces
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1/4 cup chopped fresh cilantro, if desired
Instructions:
  • Grease a 4-quart slow cooker with cooking spray.
  • Add cubed chicken to the slow cooker and generously coat with flavorful taco seasoning mix. Mix well to ensure every piece is perfectly seasoned. Incorporate the vibrant enchilada sauce and juicy tomatoes into the mix, stirring until all ingredients are thoroughly combined.
  • Cover and simmer on low heat for 6 hours.
  • Sprinkle cheese generously over the chicken, cover, and simmer on Low heat for an extra 10 minutes. Serve over rice, if desired.
