Slow-Cooker Chicken Chili-Stuffed Sweet Potatoes

Slow cook cozy sweet potato skins all day for a delectable dinner!
Ingredients:
  • Half of a sweet onion, chopped
  • 1 red bell pepper, chopped
  • Garlic, according to your taste
  • 1 lb boneless skinless chicken breast
  • 1 bottle (12 oz) beer or 12 oz water
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 3 tablespoons canned Muir Glen™ organic tomato paste
  • 2 tablespoons apple butter or packed brown sugar
  • 1 pouch (1 oz) chili seasoning mix
  • 3 medium sweet potatoes
  • 1 tablespoon butter, melted
  • 4 to 6 oz shredded sharp Cheddar cheese
  • Chopped fresh cilantro
  • Chopped jalapeño chiles
  • Chopped green onions
  • Corn chips or tortilla chips
  • Crumbled cooked bacon
  • Plain Greek yogurt or sour cream
Instructions:
  • Prepare the slow cooker by spraying the inside. Add onion, bell pepper, and garlic. Place chicken on top, then pour beer over it. Add diced tomatoes, tomato paste, apple butter, and chili seasoning mix. Gently stir to combine. Cover and cook on High for 4-6 hours or on Low for 6-8 hours. Shred chicken using 2 forks. If chili is too thin, cook uncovered while you prepare sweet potatoes.
  • Prepare the sweet potatoes: Preheat the oven to 400°F. Wash the sweet potatoes and prick them all over with a fork. Bake in the oven for 50 to 60 minutes until tender. Alternatively, microwave the sweet potatoes for 5 to 8 minutes until tender, then finish baking in the oven for an extra 15 minutes.
  • Cut the potatoes in half and let them cool until warm. Scoop out the sweet potato from the peel, leaving a thin layer of flesh inside for stability (reserve the leftover flesh for later use). Place the halves in a greased 13x9-inch (3-quart) baking dish, brush with melted butter, and bake for 5 to 10 minutes until crispy. Take out of the oven, fill with chicken chili con carne, sprinkle with shredded cheese, and bake for another 10 minutes until cheese melts and skins are hot and crispy. Serve with desired toppings.
