Slow-Cooker Cowboy Beef and BBQ Bean Sandwiches

Beef and beans sandwich with zesty slaw for a quick and satisfying meal.
Ingredients:
  • 2 medium onions, sliced
  • 2-pound beef boneless arm roast, trimmed of fat
  • 1 can (16 ounces) baked beans
  • 1/4 cup barbecue sauce
  • 1 teaspoon finely chopped jalapeño chili
  • 12 onion kaiser rolls, split
  • 1 1/2 cups prepared coleslaw
Instructions:
  • In a 3- to 4-quart slow cooker, layer onions, beef, baked beans, and barbecue sauce.
  • Slowly simmer the dish covered for 8 to 10 hours on low heat.
  • Take the beef out of the cooker and place it on a cutting board. Use 2 forks to shred the beef. Put the shredded beef back in the cooker and mix it well. Add the chili and stir. When serving, place 1/2 cup of the beef mixture in each roll and top with 2 tablespoons of coleslaw.
