Slow-Cooker Creamy Blue Cheese Salmon Casserole

Effortlessly prepare a delicious casserole in just 10 minutes using a slow cooker. No need to use the oven!
Ingredients:
  • 10 to 12 small red potatoes (1 1/2 lb), cut in half
  • 1 lb fresh green beans, trimmed, cut into 1-inch pieces
  • 1 can (15.25 oz) whole kernel sweet corn, drained
  • 1 can (10 3/4 oz) condensed cream of potato soup
  • 1/2 cup water
  • 1/2 teaspoon pepper
  • 1/2 cup half-and-half
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 1 1/2 lb salmon fillets, skin removed, cut into bite-size pieces
  • 1 cup crumbled blue cheese (4 oz)
  • 2 tablespoons chopped fresh chives
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Add potatoes, beans, corn, soup, water, and pepper to the slow cooker.
  • Cover and simmer on Low heat for 6 to 7 hours, or on High heat for 3 to 3.5 hours.
  • Whisk together half-and-half and flour in a 1-cup measuring cup until smooth. Add the mixture to the potatoes in the slow cooker, then gently stir in the salmon. If cooking on Low heat, switch to High. Cover and cook for an additional 15-20 minutes or until the salmon is flaky. Finish by stirring in the cheese and chives.
