Slow-Cooker Enchilada Sloppy Joes

Spicy beef dish with Mexican-inspired flavors, easy to make in a slow cooker.
Ingredients:
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 lb ground beef
  • 1 tablespoon from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 1/2 cup fresh cilantro, chopped
  • 1 cup shredded Mexican cheese blend (4 oz)
  • 4 soft burger buns
Instructions:
  • In a 10-inch skillet over medium heat, sauté onions in oil for about 5 minutes until softened. Add beef and cook until browned, stirring occasionally.
  • Grease a 7-quart slow cooker with cooking spray, then pour in the mixture. Add taco seasoning mix, enchilada sauce, and green chiles. Cover and cook on Low heat setting for 4 to 6 hours.
  • To enhance the flavors, gently fold in the fresh cilantro and sprinkle in 1/2 cup of the cheese right before serving. If the dish is too saucy, continue cooking uncovered for an additional 30 minutes to reduce the excess moisture.
  • Assemble on burger buns, sprinkle with the rest of the cheese, and savor every bite!
