Southwestern Sloppy Joes with refried beans, enchilada sauce, taco seasoning, and salsa.
Ingredients:
  • 3 lb lean (at least 80%) ground beef
  • 1 can (16 oz) Old El Paso™ Traditional Refried Beans
  • 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 1 packet (1 oz) Old El Paso™ 25% Less Sodium Taco Seasoning Mix
  • 1 jar (16 oz) thick & chunky salsa
  • 25 hot dog or bratwurst buns, split
  • 3 cups shredded Mexican cheese blend (12 oz)
  • 3 cups shredded lettuce
  • 2 large tomatoes, chopped (2 cups)
  • 1 container (12 oz) sour cream
Instructions:
  • In a large skillet, brown the beef over medium heat, stirring occasionally. Once cooked, drain any excess fat. Transfer the beef to a 3 1/2- to 4-quart slow cooker. Add the refried beans, enchilada sauce, taco seasoning mix, and salsa, stirring to combine.
  • Cook on low heat setting for 4 to 6 hours, covered.
  • Assemble each bun with a generous 1/3 cup of flavorful beef mixture, then add cheese, crisp lettuce, juicy tomato, and a dollop of creamy sour cream on top.
