Slow-Cooker Garlic-Spiked Turkey Breast with Fresh Basil Mayonnaise

Garlic lover's delight: Flavorful turkey breast with a hint of aroma.
Ingredients:
  • 1 bone-in turkey breast (6 1/2 lb), thawed if frozen
  • 6 cloves garlic, thinly sliced
  • 1/4 cup grated lemon peel (from 3 medium or 2 large lemons)
  • 2 tablespoons chopped fresh parsley
  • 1 1/2 teaspoons lemon-pepper seasoning salt
  • 1 tablespoon olive or vegetable oil
  • 1 cup loosely packed fresh basil leaves
  • 3 tablespoons olive or vegetable oil
  • 1 cup mayonnaise or salad dressing
Instructions:
  • Discard gravy packet and any additional parts from the turkey breast. Remove the skin from the turkey. With a small paring knife, create 1/4 to 1/2 inch deep and wide cuts on the top of the turkey. Place garlic slices into the cuts.
  • Combine fresh lemon zest, chopped parsley, and zesty lemon-pepper seasoning in a small bowl; massage onto the turkey. Heat 1 tablespoon of oil in a 12-inch skillet over medium-high heat. Sear the turkey in the hot oil until golden brown all over.
  • Place the turkey and any drippings in a 5- to 6-quart slow cooker. Cover and cook on Low heat setting for 8 to 9 hours.
  • Place basil and 3 tablespoons of oil in a food processor. Process until basil is finely chopped. Add mayonnaise and process until smooth. Serve the sliced turkey with the mayonnaise mixture.
