Slow-Cooker Italian Steak Roll for Two

Perfect for a small gathering, these mini beef roll-ups are a delicious and satisfying main dish with no leftovers.
Ingredients:
  • 3/4 lb beef round steak (1/2 inch thick), trimmed of fat
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon pepper
  • 1 thin slice onion, halved
  • 1 clove garlic, minced
  • 1/2 cup sliced fresh mushrooms
  • 1 medium Italian plum tomato, cut into quarters, sliced
  • 3/4 cup savory beef gravy (from 12-oz jar)
Instructions:
  • Lay the steak flat and season with Italian seasoning, salt, and pepper. Place halved slices of onion on top. Roll up the steak with the onion inside, then tie with string.
  • Place the beef roll, seam side down, in a 2- to 3-quart slow cooker. Surround the roll with garlic, mushrooms, and tomato. Pour the gravy over the roll.
  • Cover the dish and let it gently cook on the Low setting for 5 to 6 hours.
  • Take out the beef roll from the slow cooker and transfer it to a serving platter. Remove the string, slice the roll, and carefully stir the gravy mixture in the slow cooker until well combined. Pour the gravy into a serving bowl. Serve the sliced beef roll with the gravy on the side.
