Lemon-thyme turkey breast: delicious weeknight option.
Ingredients:
  • 4- to 5-lb bone-in turkey breast, thawed if frozen
  • 2 teaspoons butter or margarine, melted
  • 1 teaspoon grated lemon peel
  • 1 clove garlic, finely chopped
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon lemon-pepper seasoning
  • 2 tablespoons cornstarch
  • 1/4 cup water
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Put the turkey in the slow cooker. In a small bowl, combine butter, lemon peel, and garlic; then spread it over the turkey breast. Sprinkle with thyme and lemon-pepper seasoning.
  • Cover and simmer on Low heat for 6 to 7 hours.
  • Take out the turkey from the cooker and cover it to keep warm. If preferred, remove any fat from the juices in the cooker. Transfer the juices from the cooker to a 4-cup microwavable measuring cup. In a small bowl, combine cornstarch and water until smooth, then mix into the juices in the cup. Microwave uncovered on High for 2 to 3 minutes, stirring every minute, until the mixture thickens. Serve the thickened sauce with sliced turkey.
