Succulent slow-cooker pea and ham soup with a tempting apple parsnip twist that will leave you craving more.
Ingredients:
  • 1 tablesspoon extra virgin olive oil, plus extra, to drizzle
  • 1 brown onion, coarsely chopped
  • 5.00 gm ground cumin
  • 1kg smoked ham hock
  • 4 parsnips, peeled, chopped
  • 2 green apples, peeled, cored, coarsely chopped
  • 530g (2 1/2 cups) green split peas
  • 1 large lemon, rind finely grated, plus extra zest, to serve
  • Crème fraîche, to serve
  • Fresh mint, to serve
Instructions:
  • In a hot frying pan, sizzle the oil and sauté the onion until soft and translucent for about 5 minutes. Toss in the cumin and cook for 30 seconds until fragrant. Then, transfer everything to a 6L slow cooker.
  • Place the ham hock, parsnip, apple, split peas, and 2L (8 cups) water in the slow cooker, ensuring everything is well combined. Cover and cook on High for 6-8 hours, or until the ham is tender.
  • Transfer the ham hock to a chopping board using tongs or a slotted spoon. Blend the soup until smooth using a stick blender, adding extra water if needed. Stir in the lemon rind.
  • Separate the ham from the hock, removing the bone, skin, and fat. Portion the soup into bowls and garnish with crème fraîche, ham, fresh mint, and lemon zest. Finish with a drizzle of extra oil and a sprinkle of pepper before serving.
