Cozy up with a delicious pea and ham soup for a comforting winter warmer.
Ingredients:
  • 18.20 gm Classic Olive Oil
  • 1 small brown onion, finely chopped
  • 2 sticks celery, diced
  • 300g sebago potatoes, peeled, diced
  • 650g ham hock
  • 250.00 ml green split peas, washed, rinsed
  • 765.00 gm chicken style liquid stock
  • 1 dried bay leaf
  • Chopped fresh flat-leaf parsley, to serve
  • Crusty bread, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat oil until shimmering. Sauté onion, stirring occasionally, for 3 minutes until translucent. Mix in garlic, celery, and potatoes, and cook for an additional 3 minutes. Transfer the mixture to the slow cooker.
  • Place the ham hock, peas, stock, bay leaf, and 1 litre of cold water in the pot. Season with pepper and cover with a lid. Cook on low heat for 6 hours.
  • Take the hock out of the soup, discarding the rind and bone. Shred the ham and add it back to the soup. Cook on low for 1 hour, or until the ham and peas are tender. Serve with parsley and crusty bread.
