Slow-Cooker Southwestern Chicken Chili

Spicy winter soup ready in just 20 minutes to cozy up your night.
Ingredients:
  • 1 cup chopped onions (2 medium)
  • 1 medium green bell pepper, chopped (1 cup)
  • 3 cloves garlic, minced
  • 3 tablespoons cornmeal
  • 2 tablespoons chili powder
  • 3 teaspoons dried oregano leaves
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 1/4 lb boneless skinless chicken thighs, cut into 1-inch pieces
  • 1 jar (16 oz) medium picante sauce
  • 1 can (15 to 16 oz) pinto beans, undrained
  • 1 can (14.5 oz) diced tomatoes, undrained
  • Sliced green onion, if desired
Instructions:
  • Combine onions, bell pepper, and garlic in a 3- to 4-quart slow cooker.
  • Combine cornmeal, chili powder, oregano, cumin, and salt in a large bowl. Add chicken and toss to coat. Transfer chicken and any excess seasoning to the slow cooker with the vegetables. Gently mix in picante sauce, beans, and tomatoes.
  • Cover and slow cook for 6 to 8 hours on Low setting, then sprinkle with fresh green onion for a burst of flavor.
