Slow-Cooker Spicy Chicken in Peanut Sauce

Top chicken with peanuts, cilantro, and serve with warm pita wedges.
Ingredients:
  • 1 tablespoon olive or vegetable oil
  • 8 large chicken thighs (about 3 lb), skin removed
  • 1 large onion, chopped (1 cup)
  • 2 cans (14.5 oz each) diced tomatoes with green chilies, undrained
  • 1 can (14.5 oz) crushed tomatoes, undrained
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon ground cinnamon
  • 1/3 cup creamy peanut butter
  • 2 cups hot cooked couscous
Instructions:
  • Heat oil in a 12-inch nonstick skillet over medium-high heat. Brown chicken for about 4 minutes, flipping once.
  • Combine diced onion, crushed and diced tomatoes, sweet honey, aromatic cumin, and warming cinnamon in a 4- to 5-quart slow cooker. Place the chicken in and spoon the flavorful tomato mixture over the chicken.
  • Simmer covered on Low heat for 7 to 8 hours.
  • Combine creamy peanut butter into the sauce until smooth and fully incorporated. Serve the flavorful chicken with the luscious peanut sauce over a bed of fluffy couscous.
