Slow-Cooker Steak and Potatoes Dinner

Effortless morning prep leads to a flavorful one-pot dinner.
Ingredients:
  • 1 1/2 lb beef tip steak, trimmed
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 1/2 cups sliced onions
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 bag (19 oz) frozen garden vegetable medley
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Coat the beef on both sides with flour, salt, and pepper. In a large skillet, heat oil over medium heat until hot. Sear the beef in the hot oil for 6 to 8 minutes, flipping occasionally, until it is browned on both sides.
  • Layer onions in the slow cooker followed by the beef and tomatoes and then generously sprinkle with sugar.
  • Cover and let the dish simmer on low heat for 7 to 9 hours until the beef is tender.
  • Microwave vegetables according to package instructions and stir into beef mixture about 15 minutes before serving the steak.
