Slow-Cooker Winter Pork Roast Dinner

Feed six with savory, easy slow cooker pork and sweet potato dish in just 20 minutes prep.
Ingredients:
  • 1 rolled boneless pork loin roast (1 3/4 to 2 lb)
  • 1 teaspoon salt
  • 3 large dark-orange sweet potatoes, peeled, thinly sliced
  • 1 medium onion, sliced, separated into rings
  • 1 1/2 teaspoons dried thyme leaves
  • 1 quart (4 cups) apple juice
Instructions:
  • Season the pork roast with a half teaspoon of salt and pepper, then place it in a 4- to 5-quart slow cooker. Surround and layer sweet potatoes over the roast. Add onion, sprinkle with thyme and the remaining half teaspoon of salt. Finally, pour apple juice over the onion.
  • Cover and let it simmer slowly on the Low setting for 6 to 8 hours.
  • Using a slotted spoon, transfer the vegetables from the slow cooker to a serving platter. Place the roast on a cutting board, slice it, and arrange the slices on the platter. Optionally, drizzle some of the cooking liquid from the slow cooker over the vegetables and roast before serving.
