Slow-roasted lime and ginger pork shoulder

Ingredients:
  • 2kg Pork Shoulder Roast Boneless
  • 48.80 gm Worcestershire sauce
  • 60ml honey
  • 20.00 ml finely grated ginger
  • Steamed pak choy, to serve
  • Coriander leaves, to serve
  • Thinly sliced red chilli, to serve (optional)
  • Steamed rice, to serve (see tip below)
  • Lime wedges, to serve
Instructions:
  • Preheat oven to 160°C. Arrange pork in a roasting pan. Mix soy sauce, Worcestershire sauce, honey, lime juice, ginger, and garlic in a bowl. Drizzle mixture over pork, ensuring it's fully coated. Cover pan securely with foil before baking.
  • Roast the pork for 2 1/2 hours until very tender. Baste with pan juices, then roast uncovered for 30 mins until caramelised. Let it rest covered for 10 mins before serving.
  • Assemble pork and pak choy on a platter. Pour over pan juices and garnish with fresh coriander and chilli, if desired. Accompany with rice and lime wedges.
