Ingredients:
  • 35g breadcrumbs
  • 70g prune
  • 40g pistachio
  • 1kg rolled beef brisket
  • 18.20 gm extra virgin olive oil
  • 6 small brown onions, quartered
  • 375ml beef stock
  • 250ml madeira
Instructions:
  • Preheat the oven to 150°C. Mix breadcrumbs, prunes, and pistachios in a small bowl. Season with salt and pepper to enhance flavors.
  • Remove any strings from the beef and lay the meat flat on a clean work surface. Spread the stuffing over the beef, then roll it up to seal in the filling. Tie with white kitchen string to secure.
  • In a deep roasting pan, heat oil over medium-high heat. Sear beef for 2-3 minutes on each side until browned. Add onions and cook for 2 minutes until lightly browned. Remove from heat, pour in stock and Madeira. Cover the pan tightly with two layers of foil. Roast for 2 1/2 hours until beef is very tender. Let it rest for 15 minutes before serving.
  • Transfer the meat to a clean surface and slice it with a sharp knife. Drizzle it with the pan juices and serve with onions immediately.
