Slow-roasted sticky Chinese pork ribs with Asian greens

Indulge in succulent slow-roasted Chinese pork ribs paired with vibrant Asian greens and fluffy steamed rice.
Ingredients:
  • 80ml hoisin sauce
  • 42.00 gm soy sauce
  • 20.00 ml dry sherry (see notes)
  • 32.00 gm brown sugar
  • 5cm-piece ginger, cut into matchsticks
  • 1 tsp Chinese five spice
  • 1 cinnamon stick or quill
  • 2 whole star anise
  • 8 (about 600g) Pork Spare Ribs
  • 1 bunch choy sum, cut into 5cm lengths
  • 1 bunch baby pak choy, cut lengthways into wedges
Instructions:
  • In a shallow bowl, mix together the hoisin sauce, soy sauce, sherry or orange juice, sugar, ginger, garlic, Chinese five spice, cinnamon, and star anise. Add the pork and ensure it is coated evenly. Refrigerate for 1 hour to marinate.
  • Preheat the oven to 140C. Place the pork mixture in a shallow roasting pan in a single layer and cover with foil. Roast for 2 hours, turning occasionally, until tender. Uncover and roast for an additional 30 minutes until the sauce thickens and the pork is very tender.
  • Steam the choy sum and pak choy for 1 minute or until bright green. Quickly transfer the vegetables to a bowl of iced water to refresh. Serve immediately with the pork.
