Delicious and satisfying vegetarian protein breakfast.
Ingredients:
  • 125g can chickpeas, rinsed, drained
  • 5.30 gm fresh lemon juice
  • 6.00 gm tahini
  • 50g cherry tomatoes, quartered
  • 20.00 ml chopped fresh continental parsley
  • 2.30 gm extra virgin olive oil
  • 1 slice wholegrain bread, toasted
  • Lemon wedge, to serve
Instructions:
  • Combine chickpeas, lemon juice, and tahini in a small bowl. Gently mash with a fork until desired texture is achieved. Season to taste.
  • Mix together ripe tomatoes, fresh parsley, and a drizzle of high-quality olive oil. Spread the flavorful chickpea mixture over toasted bread. Finish by layering the vibrant tomato salad on top. Serve with a side of fresh lemon for an added burst of citrusy flavor.
