Wholesome, gluten-free veggie wrap - ideal for lunch on-the-go!
Ingredients:
  • 110g (1/2 cup) chickpeas, rinsed, drained
  • 21.00 gm fresh lemon juice
  • 2 tsp chopped fresh continental parsley
  • 1 wholegrain wrap
  • 1/4 red capsicum, thinly sliced
  • 1/2 carrot, peeled, coarsely grated
  • 1/2 small Lebanese cucumber, finely chopped
  • 15g baby rocket or baby spinach
  • 6.00 gm tahini
Instructions:
  • In a bowl, gently mash the chickpeas with a fork. Mix in 2 tsp lemon juice and parsley until well combined.
  • Lay down the wrap on a tidy work surface. Spread the chickpea mixture over it, and then add capsicum, carrot, cucumber, and rocket. Mix tahini with the remaining lemon juice and drizzle over the wrap. Roll it up to seal the delicious filling inside.
