Kid-friendly creamy penne with smoked chicken, effortlessly delicious.
Ingredients:
  • 1 large (about 280g) red capsicum, halved, deseeded, cut into 2cm-thick strips
  • 9.20 gm olive oil
  • 500g smoked chicken drumsticks
  • 200g (2 1/2 cups) penne pasta
  • 40.00 ml finely grated parmesan
  • 80ml (1/3 cup) low-fat sour cream
  • 1 bunch rocket, ends trimmed, washed, dried
  • Salt & freshly ground black pepper
Instructions:
  • - Preheat your oven to 220°C and line a baking tray with non-stick baking paper. - Arrange whole capsicum on the tray and generously brush with oil. - Bake the capsicum on the top shelf of the preheated oven for 20 minutes or until nicely browned. - Wrap the chicken in foil and place it on a separate baking tray. Bake in the oven for 8-10 minutes or until heated through. - Once done, remove the chicken from the oven and carefully separate the meat from the bones, then discard the bones.
  • Cook the pasta in a large saucepan of salted boiling water according to the package instructions until it is just tender. Drain the pasta and return it to the pan, covering it with a lid to keep it warm.
  • Mix Parmesan cheese and sour cream in a bowl.
  • Plate the pasta, then add the chicken, capsicum, rocket, and a dollop of the sour cream mixture. Finish by seasoning with salt and pepper.
