Add nutritious chicken slices to this classic Greek dish.
Ingredients:
  • 2 baby cos lettuce, leaves separated, washed, dried
  • 36.40 gm olive oil
  • 20.00 ml white wine vinegar
  • 1 tsp dried oregano
  • 2 slices bought chargrilled eggplant, coarsely chopped
  • 70g bought chargrilled capsicum, coarsely chopped
  • 100g feta, crumbled
  • 150g kalamata olives
  • 125g cherry tomatoes, halved
  • 1 small red onion, halved, cut into thin wedges
  • 1 smoked chicken breast, thinly sliced
Instructions:
  • Arrange the lettuce leaves elegantly on a spacious serving platter.
  • In a small jug, combine olive oil, vinegar, and oregano. Season with salt and pepper to taste.
  • Layer the eggplant, capsicum, feta, olives, tomato, onion, and chicken on a bed of crisp lettuce. Finish with a generous drizzle of dressing. Serve promptly for the best flavor.
