Mediterranean-inspired salad with homemade tzatziki dressing.
Ingredients:
  • 2 baby cos lettuce, leaves separated
  • 21.00 gm lemon juice
  • 18.20 gm olive oil
  • 450g smoked trout, broken into pieces
  • 2 x 15cm rounds of Lebanese bread, toasted, torn into pieces
  • 280g yoghurt
  • 1 small Lebanese cucumber, seeds removed, finely chopped
  • 1 small garlic clove, crushed
  • 42.00 gm lemon juice
  • 40.00 ml dill leaves, roughly chopped
Instructions:
  • Combine all the tzatziki ingredients in a bowl and mix well.
  • Combine the cos with zesty lemon juice and fragrant oil, then mix in the trout and torn bread.
  • Plate the salad elegantly and generously dollop with flavorful tzatziki.
