Spring into flavor with this healthy salad drizzled with sesame soy dressing.
Ingredients:
  • 200g snow peas, trimmed, thinly sliced lengthways
  • 1 carrot, peeled, cut into matchsticks
  • 100g yellow snow pea sprouts
  • 2 green onions, ends trimmed, thinly sliced lengthways
  • 250.00 ml micro herbs (see note)
  • 300g smoked trout, coarsely flaked
  • 6.00 gm tahini (sesame paste)
  • 21.00 gm lemon juice
  • 21.00 gm soy sauce
  • 12.00 gm brown sugar
  • 6.00 gm toasted sesame seeds
Instructions:
  • In a heatproof bowl, pour boiling water over snow peas and let sit for 1 minute until bright green and crisp-tender. Rinse in cold water and drain well.
  • Combine the carrot, snow pea sprouts, green onions, and micro herbs with the snow peas and toss gently.
  • For the sesame soy dressing, smoothly mix tahini and lemon juice in a small jug. Combine with soy sauce, sugar, and sesame seeds until well blended. Pour over salad, gently toss with trout.
  • Plate the salad portions individually and serve promptly.
