Elevate store-bought smoked chicken with green goddess dressing for a festive potato salad. Prep dressing and potatoes in advance, just boil eggs day of. A Christmas day dazzler!
Ingredients:
  • 1kg baby coliban (chat) potatoes
  • 150g baby rocket
  • 1 bunch fresh chives, chopped
  • 250g (1 cup) sour cream
  • 70g (1 ⁄4 cup) horseradish cream
  • 1 lemon, rind finely grated, 1 ⁄2 juiced
Instructions:
  • Boil the potatoes in a saucepan filled with cold water until tender, approximately 20-25 minutes. Drain and let cool before slicing them thickly.
  • Combine rocket, chives, sour cream, horseradish cream, lemon rind, and juice in a blender and blend until smooth. Season to taste.
  • Combine the potato and half of the dressing in a large bowl. Season and toss until evenly coated. Serve with the remaining dressing in a small bowl on the side.
