Smoked Corn on the Cob

Flavorful smoked corn on the cob brushed with smoky lime butter, ideal for BBQ parties!
Ingredients:
  • 4 ears corn on the cob, silks removed
  • mesquite wood chips
  • 2 tablespoons butter, melted
  • 1 tablespoon chopped fresh cilantro
  • 1 lime, zested
  • 0.5 lime, juiced
  • 1 teaspoon smoked paprika
Instructions:
  • Submerge the corn in their husks in a large pot of water and let them soak for 2 hours. Also, soak wood chips in water for approximately 30 minutes in a separate container.
  • Preheat your smoker to 250°F (120°C). Arrange the corn on wire racks in a single layer. Place the racks in the smoker and follow the manufacturer's instructions for adding wood chips. Smoke the corn for 60 to 75 minutes or until it reaches your preferred level of tenderness.
  • Mix butter, fresh cilantro, zesty lime, tangy lime juice, and smoky paprika in a small bowl. Unwrap the corn husks and generously coat the corn with the flavorful butter mixture. Sprinkle with a touch of salt and pepper.
