Ingredients:
  • 400g fettuccine
  • 125.00 ml finely sliced green shallots
  • 185mls (3/4 cup) sour light cream
  • 160mls (2/3 cup) chicken style liquid stock
  • 300g smoked mackerel (with cracked black pepper - Springs brand), skin and small bones removed, roughly flaked
  • 1 Lebanese cucumber, finely diced
  • 10.60 gm fresh lime juice
Instructions:
  • Prepare the fettuccine in a generous amount of salted boiling water as per the package instructions until perfectly cooked.
  • Heat olive oil in a large frying pan over medium-low heat. Cook garlic for 30 seconds, then add green shallots and stir for 1 minute. Reduce heat to low, pour in sour light cream and stock, stirring until well combined. Simmer gently, uncovered, for 6 minutes without boiling. Stir in smoked mackerel.
  • After draining the pasta, gently mix in the fish sauce, cucumber, and lime juice. Serve immediately.
