Smoked Salmon and Bagels

Savor quick and delicious cheesy salmon and asparagus bagels, perfect for busy nights, ready in 20 minutes!
Ingredients:
  • 4 thin stalks asparagus (about 2 oz)
  • 1 1/2 oz reduced-fat cream cheese (Neufchâtel), softened (about 2 rounded tablespoons)
  • 1/2 teaspoon dried dill weed
  • 1 teaspoon lemon juice
  • 1 bagel, cut in half horizontally
  • 1 1/2 oz salmon lox (from 3-oz package)
  • Lemon wedges, if desired
Instructions:
  • Snap off tough ends where they naturally break. Cut asparagus into 3-inch pieces. Set up steamer basket in 3-quart saucepan with 1/2 inch water. Steam asparagus for about 5 minutes until crisp-tender. Shock in ice water to cool quickly, then drain on paper towels.
  • Combine cream cheese, dill weed, lemon zest, and lemon juice in a small bowl until smooth. Spread the mixture onto the cut sides of the bagel halves.
  • Lay asparagus pieces over creamy cheese blend, then add salmon on top. Garnish with lemon wedges before serving.
