Healthy and flavorful salmon pasta - perfect for weeknight dining.
Ingredients:
  • 375g linguine
  • 1 red onion, halved, thinly sliced
  • 175g (3/4 cup) mascarpone
  • 250ml (1 cup) thin cream
  • 500g smoked salmon slices, chopped
  • 1 x 80g pkt baby rocket leaves
  • 40.00 ml drained capers, chopped
  • 20.00 ml chopped fresh dill
Instructions:
  • Boil pasta in a pot of salted water as per package instructions until al dente (approximately 10 minutes). Drain and return to the pot.
  • Heat oil in a large non-stick frying pan over medium-high heat. Sauté red onion and garlic for 3 minutes until onion softens. Lower heat to medium and stir in mascarpone and cream for 2 minutes until heated through (avoid boiling).
  • Take the pan off the heat, then stir in the pasta, salmon, arugula, capers, and dill. Taste, adjust seasoning with salt and pepper, and gently mix everything together.
  • Spoon the dish into shallow bowls and enjoy right away.
