Ingredients:
  • 123.75 gm whole egg mayonnaise
  • 17.70 gm Dijon mustard
  • 21.00 gm fresh lemon juice
  • salt and pepper
  • 2 x 60cm long French sticks (baguettes)
  • 200g smoked salmon slices
  • 1/2 red onion, cut into thin wedges
  • 1/2 bunch watercress, sprigs picked, washed and dried
Instructions:
  • Mix together 1/2 cup whole egg mayonnaise, 3 teaspoons Dijon mustard, and 1 tablespoon fresh lemon juice. Season with salt and pepper. Slice 2 x 60cm long French sticks (baguettes) lengthwise without cutting all the way through.
  • Generously slather the bread with zesty mustard mayonnaise. Layer on 200g of luscious smoked salmon slices, thinly sliced red onion wedges, and crisp watercress sprigs.
  • Assemble the halves into sandwiches. Slice into 6 equal portions. Wrap each with kitchen string to keep intact. Store in an airtight container and chill until serving.
