Delicious gluten-free salmon dish packed with healthy omega-3 fatty acids.
Ingredients:
  • 105g (1/2 cup) French green lentils, rinsed
  • 2 baby fennel bulbs, thinly sliced, some fronds reserved
  • 130g (1/2 cup) natural yoghurt
  • 40.00 ml chopped fresh continental parsley, plus extra parsley leaves, to serve
  • 40.00 ml chopped fresh chives
  • 20.00 ml chopped fresh tarragon
  • 20.00 ml salted baby capers, rinsed, drained
  • 1 tsp finely grated lemon rind
  • 1/2 red onion, thinly sliced
  • 21.00 gm fresh lemon juice
  • Pinch of caster sugar
  • 60g baby spinach
  • 1/2 avocado, sliced
  • 180g sliced salt-reduced smoked salmon
Instructions:
  • Simmer lentils in a large pot of boiling water for 20 minutes or until they are tender. Drain the lentils.
  • Heat a chargrill pan over high heat. Lightly coat fennel slices with oil and grill for 2 minutes on each side until tender.
  • Blend the yoghurt, parsley, chives, tarragon, capers, and lemon zest in a food processor until creamy. Add a pinch of pepper to taste.
  • Combine the onion, juice, sugar, and a pinch of salt in a bowl. Let it sit for 5 minutes, then drain.
  • In a large bowl, mix together the lentils, fennel, onion, spinach, and avocado. Transfer the mixture onto plates. Place the salmon on top. Garnish with the fennel fronds, parsley, and green goddess dressing.
