Smoked Sausage and Apple Bake

Savory smoked sausage with apples, onions, and sauerkraut, served with potatoes and cornbread. Substitute apple cider for brandy in the gravy if desired.
Ingredients:
  • 1 pound smoked sausage, sliced
  • 2 Granny Smith apples - peeled, cored and sliced
  • 0.5 teaspoon ground cinnamon, or to taste
  • 0.5 large onion, sliced
  • 1 (16 ounce) can sauerkraut, drained
  • 0.5 cup heavy cream
  • 0.5 cup apple brandy
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while you brown the sausage in a large skillet over medium heat. Set aside.
  • Start by arranging the sliced apples in the bottom of a 2 quart casserole dish, gently sprinkling a bit of cinnamon over them. Layer half of the onion, followed by half of the sauerkraut on top of the apples. Then, add all the sausage slices on top of the sauerkraut while keeping the drippings in the pan. Cover the sausage with the remaining sauerkraut and onion, and finish by layering apple slices on top. Lastly, sprinkle the remaining cinnamon over the dish.
  • Combine the heavy cream and brandy in the skillet with the sausage drippings. Stir over medium heat to scrape up the flavorful bits. Drizzle the mixture over the sausage and apple casserole.
  • Bake covered in a preheated oven for 1 hour. Allow to rest for a few minutes before serving.
