Smoked Sausage Casserole with Cheesy Cornbread

Savory meat and vegetable casserole topped with golden cheesy cornbread crust.
Ingredients:
  • 1 ring (1 lb) fully cooked smoked sausage or kielbasa, cut into 1/4-inch slices
  • 1 bag (1 lb) frozen broccoli, carrots & cauliflower, thawed, drained
  • 2 cans (10 3/4 oz each) condensed Cheddar cheese soup
  • 1 1/4 cups Original Bisquick™ mix
  • 3/4 cup cornmeal
  • 1 1/2 cups milk
  • 2 eggs
  • 1 cup shredded Cheddar cheese (4 oz)
Instructions:
  • Preheat oven to 450°F and generously coat a 13x9-inch pan with cooking spray. Combine sausage, vegetables, and soup in the prepared pan.
  • Combine Bisquick mix, cornmeal, milk, eggs, and 1/2 cup of cheese in a medium bowl. Pour mixture over the sausage.
  • Bake for 25-30 minutes, then sprinkle with the remaining 1/2 cup of cheese in the last 1-2 minutes until golden brown.
