Quick and comforting smoked sausage casserole, perfect for weeknight dinners.
Ingredients:
  • 1 (16 ounce) package frozen peas
  • 1 (1 pound) package smoked sausage, cut into 1/2-inch pieces
  • 1 (15 ounce) can yellow corn, drained
  • 1 (12 ounce) bottle chili sauce
  • 0.25 cup finely chopped onion
  • 1 tablespoon dried basil
  • 0.25 teaspoon ground black pepper
  • 2 cups shredded Cheddar cheese, divided
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • Bring a pot of water to a rolling boil. Add peas and cook for about 5 minutes until tender. Drain peas.
  • Combine peas, sausage, corn, chili sauce, onion, basil, black pepper, and 1 3/4 cups Cheddar cheese in a 3-quart casserole dish.
  • Bake the casserole in the preheated oven until it's bubbling, for 30 to 40 minutes. Sprinkle the remaining 1/4 cup of Cheddar cheese over the casserole and bake for an additional 5 minutes or until the cheese is melted.
