Delicious smoked trout finger sandwiches, ideal for any gathering.
Ingredients:
  • 2 cucumbers, thinly sliced lengthways
  • 20.00 ml chopped dill
  • 20.00 ml white vinegar
  • 1.20 gm sea salt flakes
  • 2.50 gm caster sugar
  • 12 slices dark rye bread
  • 80g cream cheese, softened
  • 300g sliced smoked trout
Instructions:
  • In a medium glass or ceramic bowl, mix the cucumber, dill, vinegar, salt, and sugar. Cover with plastic wrap and chill in the fridge for a minimum of 3 hours to enhance the flavors.
  • After draining the cucumber, gently squeeze it to remove excess liquid. Spread cream cheese on each bread slice. Top half of the slices with cucumber and smoked trout, season with pepper, then sandwich together with the remaining bread slices. Use a serrated knife to remove the crusts and cut each sandwich into 3 fingers. Serve on a platter.
